Ruby color, good viscosity. To the nose is clear, intense and clean, pleasant hints of cherry and violet with continual references to black berries and juicy. Large soft taste, texture and long finish.
Ideal with red meats , game and cheese slightly seasoned.
Destemming, temperature controlled fermentation. 10 days at contact with the skins. Maturation and aging in stainless steel vats.
